The City of Dream - The Tasting Room - reopened its doors last December 1, 2017 and it's located at the ground floor of NÜWA, The Tasting Room's new home features the best of French cuisine with an array of courses using the best produce from the Philippines and abroad. The offer exceptional dining experience that tingles the senses.
Frederic Thevenet's three decades of exceptional culinary expertise at its helm. Known for working in Michelin - starred restaurants such as Pierre Gagnaire in Paris. The Waterside Inn, London; Claude Troisgros, New York and Bruno in Provence. The new team headed by Chef Frederic Thevenet aims to create a more exciting European fine dining experience in a more elegant settings.
Along with Stephen Moroney, who heads the The Tasting Room's service team as they provide first-rate dining experience.
Establishment can seat 56 guests in total. They have the main and semi-private room with a bar top of line liquor around the world. Pieces of modern contemporary designs and high-quality furniture completes the sophisticated ambiance of the restaurant.
Intricately placed table setting, from the distance between each silverware and tableware was precise and measured.

The next course is the perfectly cooked lobster with rich, creamy bisque purée of mango bits. Chef Fredeirc suggests starting with side of lobster rilletes which was made with yogurt and lobster legs.
Although I was the lucky person with lobster shells still attached to some chunks of lobster. Despite that mishap it was one of the notable dishes I ate that night. I informed one of the servers named Shiela about this and hopefully they'll be more careful next time.
Cape Grim Grass Fed Beef Tenderloin | Black Pepper | Onions | Potatoes
Wine Paired: 2011 Penfolds Bin 389, Cabernet Sauvignon & Shiraz
Then comes the tenderloin seasoned with just salt and pepper is simple but flavorful complimented with beets, greens and gnocchi. Beef tenderloin was exceptionally tender and juicy having it cooked medium rare was ideal with this kind of meat.
Chocolate Success | Lychee Veloute
Wine Paired: 2013 Jurancon, Clos Lapeyre
Decadent dark chocolate meringue and parfait drizzled with warm chocolate sauce. It was a perfectly balanced sweetness despite how rich it looked. A side bowl of lychee veloute caps this culinary adventure. It was a best ender for it was refreshing and cleaned my palate.
